Citation: On 7/13/2010, at approximately 1007 hours, I performed presentation verification (ISP code 06D02 0 at the first inspection station in the evisceration department. At a line speed of [redacted] birds per minute, presentation failed with a 10-bird total nonconformance weight of [redacted] This failure consisted of 5 viscera not uniform (8 nonconformance factors each), 1 contamination on viscera (6 nonconformance factors), 1 parts inside (1 nonconformance factor), and 2 contamination inside bird (6 nonconformance factors each). I immediately notified , Evisceration Group Lead, and , 1st Processing Manager, of the establishment's failure to meet regulatory requirements and that a NR would be issued. I also notified them that the evisceration line speed must be reduced to [redacted] birds per minute (a [redacted] bird per minute reduction) until QA presentation retests passed. QA presentation retests passed at [redacted] then [redacted] birds per minute. Establishment management have received oral and written communication concerning this noncompliance. Past Similar NRs - Previous Ineffective Plant Actions: "Grow out was also informed that we cannot process birds that over [redacted] lbs; the ideal weight would be no higher than [redacted] lbs. If they are all bigger than this a presentation test will be performed to ensure compliance, if not then line speed will be adjusted accordingly." NR: 35-2010 dated 6/22/2010 The previous preventive measure was either not implemented or was ineffective in preventing the recurrence of this noncompliance.

Regulation:

381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
