Citation: At approximately 1349 hours, while performing a procedure for Finished Product Standards (Processing/Trim Nonconformance) Test at the Pre-chill Station) on the East Evisceration Line, my test exceed the absolute limit of 30, the FPS for Processing Category on the test was not in the absolute limit.. My test results subgroup total was 38, the processing nonconformance’s were one (1) extraneous material < 1/16”, two (2) extraneous material > 1”, two (2) Oil glands-remnant, two (2) Oil Glands-two whole glands, two (2) lung > 1/4", one (1) Bursa of fabricius, one (1) Crop – partial – with mucosa, fifteen (15) feathers and/or pinfeathers, and six(6) feathers >. I immediately notified (Quality Assurance) of my findings. A review of the establishment history (Processing/Trim Nonconformance tests) shows no previous five (5) CUSUM’s exceeded the start number. Quality Assurance performed a retested for Finished Product Standard processing nonconformance’s on the west evisceration line at 1402 hours for processing nonconformance’s and failed the retest with a result of which exceeded the tolerance of 25 for processing category, and placed the west evisceration line in action mode. I informed (1st Processing Superintendent) and Dr. (IIC) of the results. Quality Assurance performed retests for processing nonconformance at the post chill station using prechill criteria, and passed at approximately 1432 hours, 1502 hours, 1532hours, and 1602 hours. After the establishment implemented corrective action, Quality Assurance performed a retested for Finished Product Standard processing nonconformance’s on the west evisceration line at 1426 hours, and 1437hours for processing nonconformance’s and both tests passed Quality Assurance tagged 3 carcasses with red tags to mark the end of the failure mode at approximately 1440 hours at Pre-Chill Station. At approximately 1612 hours, the red tags came out of the chiller marking the end of the failure mode. Establishment management has received oral and written communication concerning this noncompliance.
Regulation:
381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
