Citation: At approximately 1305 hours, while performing an unscheduled 06D01, I observed heavily beaded condensation on most the white pipes on the evisceration floor. These pipes extend over the length of the evisceration floor and in certain areas they cross over the line and are over product. There was condensation on the pipes over product, thus product adulteration was imminent had the situation not been corrected. I notified (Group Leader) of the situation and of this noncompliance. I observed as establishment personnel began to wipe down the condensation. This is a violation of 9 CFR 416.2(b)(2). The establishment has received both written and oral notification of this noncompliance. Failure to meet regulatory requirements could result in additional administrative action as described in 9 CFR part 500.
Regulation:
416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
