Citation: On 05/18/2011, at 0720 hours, while touring the establishment I observed condensation on the door arch way between Tray pack/ blast freezer area and the marination area, I also notified Ms. of condensation on the arch way into the Weigh /Price cooler. I rejected the door ways through which product moves with U.S. Reject Tag #s B40197819 and B40197809. I notified Mr. and Mr. that a NR would be issued for this noncompliance. At 0730 hours I re-inspected and released the areas to production after the condensation was corrected. The USDA staff is also observing condensation through out all departments within the establishment, the air flow should be evaluated. This is a failure of the establishments SOP and 9 CFR 416.2(d). Continued failure to meet regulatory requirements could result in additional enforcement action as described in 9 CFR part 500.

Regulation:

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
