Citation: At approximately 0735 hours I performed a Post-Chill Finished Product Standards test at the chiller exit. I observed one carcass in ten had a "X" cut into its left thigh. This is the establishment's permanent marking system indicator that the marked thigh was identified for removal at an inspection station. The establishment failed to complete the task as indicated by their marking system, permitting unwholesome product to enter commerce. I took the affected carcass to the Evisceration Department to show it to , Evisceration Supervisor, and I informed him an NR would be issued. The carcass was salvaged. Plant management has received oral and written notification of this noncompliance.
