Citation: On Sunday, October 17, 2010, at approximately 2001 hours, while performed a review and observation component for the 01C02 procedure in the Evisceration Department, I observed black grease marks on the product contact surface of the East Line Rehang Conveyor Belts at different location on the two conveyor belts from previous day's operation. The black grease marks range from 1/8 inches to 1/2 inches in size. Also, there were two grease lines approximately 1/4 inches in size going completely around the conveyor belt surface. I immediately took a regulatory control action on the East Line Rehang Conveyor Belts with US Rejected Tag B39 801349. Production was stopped on the East Evisceration Line. All products involved were immediately removed from the conveyor belts. At approximately 2006 hours, while continuing my review and observation component in the Evisceration, I observed black grease marks and grease lines on the product contact surface to the West Line Rehange Conveyor Belts at different location on the two conveyor belts from previous day's operation. I rejected the West Line Rehang Conveyor Belts with US Rejected Tag B39 801348. The black grease lines were completely around the conveyor belt surface. The black grease marks were approximately 1/8 inches to 1/2 inches in size. After sanitary conditions were restored and the process was under control, I relinquished the regulatory actions on the East and West Rehang Conveyor Belts at approximately 2017 hours. At approximately 2019 hours, while continuing my review and observation component in the Evisceration Department, I observed black grease marks on the product contact surface at the East Cropper Machine from previous day's operation. I immediately stopped production and rejected the East Cropper Machine with US Rejected B39 801347. The black grease marks on the multiple green guard pads. Also, I observed black grease marks at the different locations at the cropper probes locations approximately 1inch to 3 inch in size. After sanitary conditions were restored and the process was under control, I relinquished the regulatory action on the East Cropper Machine at approximately 2043 hours. I informed (Sanitation Supervisor) and (First Processing Superintendent) of my observation. A check of the plant GMP forms and plant's Operational Sanitation record (Evisceration) shows no documentation for the above noncompliances. A check of the plant SSOP form for (Evisceration) shows East Rehanger and West Rehanger fails, reason failed - feathers, East Cropper fail, reason failed - residue. Corrective measures - rewashed and resanitized. This Department was released at 1830 hours for inspection. The Establishment SSOP Plan under Operational Sanitation, revisions effective 03-18-2008: Processing " [redacted]. Establishment management has received oral and written notification concerning this noncompliance. The noncompliance's involved direct products cross contamination. This document serves as a written notification that your failure to comply with regulatory requirement could result in additional enforcement action described in 9 CFR part 500.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
