Citation: At 0659 Hr. while conducting the 01B02 procedure in the cut-up/grinding area I observed white meat particle on the table/tray foot in the grinder. I notified Mr. [redacted] QC Manager of the non-compliance at the time of the observation. Management took immediate corrective action. No regulatory control action was needed on this equipment since the plant took immediate corrective action. This equipment was reinspected and found acceptable for operations at 0705 Hr. At 0741 Hr. while conducting Pre-operational sanitation on the MDM, I observed the following. on this equipment. The equipment was not broke down for a thorough inspection, however upon inspection of this equipment I found many particles of white meat on the drum of the machine. I notified and shown both Mr. [redacted] QC Manager and Mr. [redacted] Plant Manager the noncompliance. I applied US Reject Tag No. B34 802626 to the equipment. This is a violation of 9 CFR 416.13(c) and 416.4(a).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
