Violation: 416.4(b)

Citation: At approximately 0650 hours while conducting a scheduled 01B02 procedure, I observed in the evisceration department a build up of dust and debris on the plastic tubing that conveys the chlorine supply to the reprocessing station. This tubing is directly over the reprocessing station. There was a build up of dust on the evisceration camera. This camera is located directly above the salvage station. The rail for the shackles had a build-up of rail dust. The carcass shackles hang directly below the rail. In the cut-up room, the stainless steel plate, about 18 inches in width, that is located half way up the wall where the clean lugs are stored is peeling away from the wall leaving in some areas a gap between the wall and the plate of about 1/4 inch. The caulking that was placed to seal the interface between the wall and the plate is moldy in areas and is pealing in others. Ms. QC, was shown the non-compliances. The establishment is not complying with 9CFR 416.4(b).

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
