Citation: At approximately 1245 hours while performing a scheduled 03C02 procedure I observed the following: The record for CCP # [redacted] for the Raw Not Ground HACCP plan dated 4/18/2011 has product temperatures recorded for the times of 1535, 1620, 1734, and 1836 hours. Below this last entry is written " Production stop at 7:00pm." However, there is an entry for product temperature at 2237 hours demonstrating that production was restarted. There is no entry or comment as to when production started again . Therefore, there is no way to know if product temperature was taken at the frequency of once within each hour of production. Additionally, a direct observation of the monitoring was recorded at 1620 hours; however, no results were recorded. Mr. [redacted] HACCP Manager, was verbally notified of the above non-compliances. The establishment is not complying with 9CFR 417.5(a) (3) and 417.5 (b).

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made. (b) Each entry on

417.5(b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry.
