Citation: At approximately 08:30 hours while performing schedule procedure 03C02 (HACCP) I observed the following in the establishments records for Raw - Not Ground Product. The establishment form 023 - Shipping Temperature Critical limit- product temperature to be [redacted] or lower before shipping. had no results for 02/09/2011. According to the HACCP plan under the processing step Shipping " Food safety Hazard/pathogen growth/Salmonella/yes. Reasonably likely to occur/No. Basis for decision/ Ship finished product at [redacted] or below. I then reviewed the establishment's records from the period of 01/24/2011 to 02/09/2011 and observed that the shipping temperature were only listed on the following dates: 02/02/2011, 0203/2011, 02/08/2011. The establishment is not providing supporting documentation to justify the decision that Salmonella is not likely to occur at the shipping step of the HACCP plan. Mr. [redacted] was notified of the above noncompliance both verbally and in writing with this noncompliance report. A review of the establishment's previous noncompliance's showed no similar noncompliance's over the past 90 day period.
