Citation: At approximately 0650 hrs.after plants pre-operational sanitation and prior to the start of operations while performing an O1B02 I observed the white wheels that the white belt is connected to move the belt (on the transfer belt ) in the evisceration department had a thick brownish build up of product residue from the previous days operation. I informed Ms. [redacted] of the non compliance. Ms. [redacted] took immediate corrective action by instructing an employee to reclean and sanitize the wheel area immediately therefore no further regulatory action was needed. Also I observed in the storage room next to the belt, two aprons hanging on the wall where brooms and other equipment are hung. A similar occurrence was documented on N.R.# 0074-2010-17310, dated, 12-02-2010. Ms. [redacted] instructed the employee that was in the room to clean and sanitize the apron before the start of production. no further regulatory control action was needed. Past Similar NRs - Previous Ineffective Plant Actions: plant's further action was either not implemented or was ineffective NR: 1-2011 dated 1/4/2011 This document serves as a written notification that your failure to comply with regulatory requirement(s) could result in additional results in additional regulatory or administrative action.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
