Citation: At 0903, I entered the evisceration department and reviewed the records for CCP 2B. I noted that necks had begun chilling in tank 39 at 0705, hearts/livers/and gizzards had begun chilling at 0705 in tank 15, and that salvage parts had begun chilling at 0705 in tank 32. There was no entry in the space denoted for the final chill temperature and time. I entered the cooler to see if the CCP was being monitored as the three containers were all in the cooler. No one was present. I then went back into evisceration and noted that no one appeared to be preparing to monitor the CCP. I went over and observed the time which was 0906. I returned to the area where the CCP records are kept and Ms. [redacted] entered the department. I asked her to observe the time which was now 0907 and then I showed her the records which demonstrated the critical limit for the necks in tank 39, the hearts/liver/ and gizzards in tank 15, and the salvage parts in tank 32 had exceeded the critical limit. The critical limit for these products is that [redacted] She then proceeded into the cooler and took temperatures of the affected products. They were all degrees [redacted] F. She began corrective actions in my presence and therefore no regulatory control was taken. Mr. [redacted] Plant Manager was also verbally notified of the non-compliance. The establishment is not complying with 9CFR 417.2(c)(4).

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
