Citation: At approximately 01330 hrs. while relieving the line Inspector for break from the evisceration line, I observed a lot of turkeys presented to me with fecal contamination inside and outside of the carcasses. I instructed my helper to hang back the contaminated birds to be reworked. I had to stop the line twice because the hang back rack & reprocessing table was filled up with fecal contaminated birds. When the line Inspection came back from his break, I walk to the end of the line and the first carcasses I took out of the chill tank for b - birds had fecal on the lower thigh area the size of approximately 1/4". I immediately took regulatory control action by stopping the evisceration line and applying USDA Reject/Retain tag to the (#3) b-tank of turkeys. I informed Mr. [redacted] (assistant supervisor) & [redacted] assistant manger), of the noncompliance. When immediate corrective action was implemented by the plant and the tank of b-birds were reworked regulatory control action was relinquished. The plant is not meeting 381.65(e).

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.
