Citation: At 0652 Hr. while conducting the 01B02 procedure Dr. [redacted] and myself found the following non-compliances. In the packing room the belt conveyor from the tipper tie in to the shrink tunnel had feather and fat adhered. The side of the rollers in to the shrink tunnel had fat on it The white boards on the product tables had black marks/ substance on them. Also in this room a 1/2 - 1/2 inch piece of fat was on the wall behind the shrink tunnel. In the cut-up room there was one thread like worm on the white table board nearest the hand wash sink. In the tray pack machine the band belts inside the machine have a brown substance on them. The flat belt leaving the machine is tore at several areas. This is a violation of 9 CFR 416.13(c), 416.3(a), 416.4(a), and 416.4(b).
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.
416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
