Citation: At 0650 Hr. while performing the 01B02 procedure I observed in the slaughter room the following with blood and feathers adhered to them. The shackles, bleeding trough, and the table next to the sliding door entering in to the room from the loading dock were in non-compliance. [redacted] Plant Manager was immediately notified The plant took immediate corrective actions and the following non-compliances were acceptable at 0710 Hr. On the loading dock at 0705 Hr. Dr. [redacted] observed the grey overhead beam with a white dust like material on the upper portion of the beam extending the total length of the dock area. [redacted] Plant Manager was notified of the non-compliance at the time of the finding. At 0730 Hr. I observed in the box making area next to the outside freezer wall on the grey rack, 3 boxes molded and wet with product bags and wrap inside of them. [redacted] Plant Manager was immediately notified of the non-compliance. The 3 boxes of molded/wet packaging were thrown out as trash at 0756 Hr. The following are violations of 9 CFR 416.13(c), 416.4(a), and 416.4(b).
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
