Citation: At approximately 06:45 hrs.,while Dr. [redacted] and I CSI GS-10 relief [redacted] performed scheduled 01B02 and found the following non-compliance: Kill area:There were two metal clamps that were rusty clamped onto the tables where the poultry comes out of the feather pickers Evisceration department:there are several small holes in the walls and next to the door into the packing department there is a tennis ball size hole in the wall to the right of the door.The metal stripping around the door is all dented and separated from the wall. Packing department:There are several small holes in the walls and ceiling.The table at the end of the shrink tunnel had the cutting board bolted to the table which deterred inspection of the tabel.The plant manager [redacted] took immediate corrective action by removing the bolts and removing the cutting board.There was a buildup of dried crusty material that the plant manager scraped off with a knife and then washed and sanitized.The pipe to the bag vacuum machine had debris in the pipe. Cutup Department:There are several small holes in the ceiling and walls.The condensation hose had a yellow buildup in the hose. Grinding and tray pack area:The track over the door to the product cooler has a buildup of dirt and rust. The Establishment is not complying with 9 CFR-416.2(b),416.3(a),and 416.3(b).
416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
416.3(b) Equipment and utensils must not be constructed, located, or operated in a manner that prevents FSIS inspection program employees from inspecting the equipment or utensils to determine whether they are in sanitary condition.
