Citation: At approximately 08:35 hrs.while performing operational sanitation I found the following non-compliance: The trough and the edges of the trough in front of the plant employees and the USDA inspector had fecal material and viscera all over the bottom and sides of the trough. I informed the supervisor immediately.The supervisor was working on the line,so I stopped the line and had the supervisor call the Plant Manager [redacted],When Mr. [redacted] came to the evisceration Dept.I informed him of the Operational Sanitation non-compliance.Corrective action was taken immediately.The Est. is not complying with 9 CFR-416.4(b). At the same time I also informed The Plant Manager that there were several birds being presented to the inspector with the skin ripped off the entire back of the bird or the front of the bird.It states in Regulation 9 CFR-381.91 that these birds must be condemned.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
