Citation: At 1245 Hr. while observing conditions in the evisceration department I observed the following non-compliance. Hand wash sink in the corner near the chill cooler, the water from the sink drains on to the floor even though it has a drain pipe connected. I also observed the product reconditioning sink and salvage station with the water draining directly onto the floor. The new hand wash sink next to the salvage station has the water draining on to the floor, no drain/sewer piping is in place to remove waste water from this equipment. I also observed the inedible barrel that collects the waste water from the gizzard peeler with the waste water coming over the top of the barrel and draining onto the floor. I notified [redacted] of this non-compliance when it was observed. The plant has a Good Manufacturing Practice for the Disposition of whole birds on the floor. This GMP states" 1. Poultry parts on the floor will be automatically condemned unless: (a) They are picked-up immediately. (b) Any cut surface of the part's touching the floor is trimmed away if necessary and condemned as inedible. Part's falling into puddles should be condemned. (c) All surfaces of the part's is thoroughly washed. (d) Parts are not allowed to pile up prior to washing. (e) A separate conveniently located properly equipped wash table with sprays and removable perforated plate to hold product off the table top is provided. The table should be identified as a Product Wash Table and should not be used for hand or implement washing. 2. Copy of the FSIS notice is attached. FSIS Notice NE-93-7, date 01/11/93." This non-compliance is a violation of 9 CFR 416.2(e) 2, 416.2(e)3, and 416.4(d).
416.2(e)(2) Plumbing. Plumbing systems must be installed and maintained to: Properly convey sewage and liquid disposable waste from the establishment
416.2(e)(3) Prevent adulteration of product, water supplies, equipment, and utensils and prevent the creation of insanitary conditions throughout the establishment
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
