Citation: At approximately 1300 hours, Dr. [redacted] and I reviewed the establishment's slaughter HACCP plan. This HACCP plan was reassessed on 7/7/2010 in response to the establishment's results for the Salmonella set completed on June 22, 2010. The changes observed in the HACCP plan include: [redacted]. In written communication to FSIS dated 7/7/2010, it was explained that a shower head would be at the scalder that added 20-50 ppm of chlorine. However, the hazard identified at this step, Pathogen presence/growth Salmonella is not identified as being controlled by the addition of chlorine. Additionally, there is no supporting documentation that demonstrates that this control at this step is an effective means of controlling the pathogen Salmonella. 2. [redacted]r. The two process steps mentioned above contain the only changes made to the establishment's HACCP plan. The establishment has no supporting documentation that supports that the changes made to the HACCP plan will control Salmonella in the process. Mr. [redacted] HACCP Manager, was verbally notified of the non-compliance. The establishment is not complying with 9CFR 417.5(a)(1).
