Citation: At approximately 1521 hours, while I was perfroming my Poultry Zero Tolerance task, I observed one of the ten carcass sample to be contaminated with fecal material. The green and white pasty material was approximately 1/8" x 1/2" in size and on the kidney area inside the carcass. I informed [redacted] (Evis supervisor) of this noncompliance. The slaughter HACCP procedure, including corrective actions, was initiated immediately, therefore regulatory control was not required. The last zero tolerance check had been performed at 1501 hours, by the HACCP technician and was in compliance. A retest was taken at 1538 hours and was in compliance.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.
