Citation: At approximately 0950 hours I walked into the packing area for legs and thighs in plant 1. I walked over to check the labels on the legs and thighs. I observed an employee put a plastic bag into a case/box to put the legs and thigh in. The employee then set the case/box she had just prepared on top of another case/box that already had a plastic liner. This placed the outside of the box, a non-product contact surface, in contact with the plastic lining of the other box which is a product contact surface. In the sort time it took me to find a supervisor/ Q.A. tech the employee had filled the box/case with product. I immediately informed Mr. [redacted] and Ms. [redacted] of my findings.[newline]I retained the product with retain tag number B36 279406[newline]Mr. [redacted] and Ms. [redacted] took immediate corrective actions. Mr. [redacted] had an employee remove the 22 cases/boxes from the line. Ms. [redacted] immediately started to remove the product from the box/cases to put into a stainless steel tank.[newline]The product was rinsed at the rewash station and submitted for inspection. I removed the retain tag and released the product.


416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
