Citation: At approximately 1828 hours, the lines were coming back from the lunch break, when I observed condensation directly above Line # [redacted] and the carcasses going down the line. I immediately stopped the line and had the USDA Inspector ring the bell for assistance. After further investigation the condensation was on the pipe above the pac man back up drawer down past the cropper. There was also three other pipes that were along side Line # [redacted] that had condensation on them. I notified [redacted] ( Evis supervisor) of the noncompliance and he had the group leader wipe down the pipes. When the group leader got to the section of the pipe above the pac man back up drawer, condensation dripped from the pipe onto the carcasses below. I immediately informed [redacted] of this noncomplinace and he segragated the carcasses directly below that pipe. Corrective actions were started with the carcasses that had been contaminated with the condensation, so no product was retained with a USDA retain tag. The pipes were completely wiped down of the condensation and Line # [redacted] was restarted.


416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
