Citation: At approximately 0525 hours I conducted a Preoperational Sanitation Inspection on the Wet Side, line [redacted] in Plant 2.This was after QSI had performed their preoperation inspection.[newline]During the inspection the inspection I observed the following noncompliance:[newline]I looked into the sauce kettle on line [redacted] and found the yellow electrical cord for the fan in the kettle. The kettle is approximately 4 feet in height. The metal hookup (plug) for the fan was at the bottom of the kettle and 4 foot of the yellow cord was against the inside of the kettle. Mr. [redacted] QSI supervisor, was present during my inspection and observed the noncompliance. Mr. [redacted] immediately had his QSI associates, remove the yellow electrical cord, rinse and sanitize the kettle. The cord is a noncontact surface on a food contact surface. I also notified Ms [redacted] (Plant Manager) and Ms. [redacted] (Supervisor) of the noncompliance. My findings were made prior to the start of operations, therefore no product was affected as a result.[newline]With the exception of the cord in the kettle line [redacted] was very clean and acceptable[newline]The plant is not following 9CFR 416.13(a) and 416.13(c).


416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.
