Citation: At 1316 hours I was inspecting a randomly selected sample of ten birds taken from Line # [redacted] at the prechill testing station in the Evisceration Department. On one of the ten birds in my sample, I observed that there was a light brown thin smear of shiny material below the tail in the cleft where the oil glands had been removed. After smelling the material I concluded that it was fecal material. Also, had this bird not been included in my 10 bird sample, it would have entered the chiller without further intervention by the establishment. This is not in compliance with 9 CFR 381.65(e). I immediately called for a supervisor, and [redacted] and [redacted] observed the noncompliance. A retest was conducted at 1322 hours and no further fecal material was observed. The establishment began corrective actions immediately. I also reviewed the noncompliances for this establishment and observed that similar noncompliances have been documented during this shift on 3 previous occasions during the last six weeks as noted in box 6a above.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.
