Citation: At 1037 hours I was in the Evisceration Department preparing to select a 10 bird sample from Line # [redacted] at the prechill testing station. However, before I could begin selecting the sample, I observed a bird traveling down the line with what appeared to be intestine (with some brown material exuding from it) trapped between one of the legs and the shackle carrying it. I immediately told an online inspector to stop the line and called for a member of management. With the line stopped I was then able to confirm that the piece of intestine was the end of a cecum approximately 3/4 inches long and the brown material coming from it was a semi-solid chunk of feces approximately 1/2 inch long. [redacted] was present and observed the same. As he removed the bird from the line, the piece of cecum and feces dropped to the floor. Had I not taken regulatory control action to stop the line, this piece of intestine and feces would have instead dropped into the chiller. This is not in compliance with 9 CFR 381.65(e). After the shackle was rinsed, I released the line. The establishment conducted a test on a 10 bird sample at 1043 hours and no further fecal material was observed. In addition I also remained present at this location after the line was started and until the establishment's test was completed, and I observed no further intestines or fecal material on birds passing the prechill testing station.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.
