Citation: At approximately 1510 hours, while I was performing my Poultry Zero Tolerance Verification task, I observed one of my ten carcass sample to be contaminated with fecal material. The green and brown pasty material was approximately 1/8" x 1/4" in size and on the kidney area inside the carcass. I informed [redacted] (Evis supervisor) of this noncompliance. The slaughter HACCP procedure, including corrective actions, was initiated immediately, therefore regulatory control was not required. The last zero tolerance check had been performed at 1500 hours, by the HACCP technician and was in compliance. A retest was taken at 1516 hours and was in compliance.


381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.
