Citation: At 0816 hours I was performing a Fecal Zero Tolerance test on a randomly selected sample of 10 carcasses taken from Line # [redacted] at the prechill testing location in the Evisceration Department. On one of the 10 birds I observed a mass of brown, smooth material approximately 1/4 inch long and 1/8 inch wide on the breast muscle in the area of the neck outside of the body cavity. I called for [redacted] who observed the mass and removed it with the tip ofa pair of scissors. At that time I observed that it was semi-solid and pasty. After smelling the mass I concluded that it was fecal material. Furthermore, this bird would have entered the chiller without further intervention by the establishment had it not been included in my random sample. This is not in compliance with 9 CFR 381.65(e). The establishment performed a retest at 0820 hours with no additional findings. Corrective actions and preventive measures were taken immediately, therefore no other regulatory control action was required.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.
