Citation: As a follow up to noncompliance #1 of this noncompliance record, I reviewed the establishment's written Slaughter HACCP plan and observed that under CCP1B one of the corrective actions is, "3). Disposition of affected product: Back to last good check. After chiller, hangers should visually inspect birds on line, inspecting the known affected area as they hang." I then reviewed the slaughter HACCP records, including the documentation of corrective actions for the noncompliance referenced above. However, there was no documentationof hangers visually inspecting the birds after the chiller. I spoke with [redacted] Assistant Plant Manager, and [redacted] HACCP coordinator, and neither of them was able to provide documentation that this corrective action was performed.


381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.3(c) All corrective actions taken in accordance with this section shall be documented in records that are subject to verification in accordance with 417.4(a)(2)(iii) and the recordkeeping requirements of 417.5 of this part.
