Citation: At approximately 1430 hours, I was performing my Finished Product Standards on Line # [redacted] when one of the carcasses of my ten carcass sample, was found with a split tail. Upon further observation I found that the Airsacculitis had not been properly vacuumed out. Which is a failure to complete task as indicated by the marking system. I notified [redacted] (Evis GPM) of the automatic failure and he went to notify the QC technician that a retest was needed for Line # [redacted] Upon finishing my Finished Product Standard test for Line # [redacted] my total was 16, so the retest was for the pathology only. The QC technician started the first retest at 1444 hours and also failed with a carcass with a split tail and Airsacculitis still present inside the carcass. I notified [redacted] (Evis supervisor) of the retest failure. The chilling QC technician was notified that a postchill check with prechill criteria for pathology was needed in the chilling department. Meanwhile in the Evis department The QC technician did another retest at 1455 hours and passed. He then passed another retest at 1501 hours. The first retest in chilling was taken at 1509 hours and passed with no cacrassess found with the pathology criteria. The next was taken at 1552 (check was taken after the 30 minute limit due to no carcasses on the line) and passed with no pathology found. Retests at 1622 hours and 1652 hours also passed with no pathology found. The retest at 1722 hours failed with one carcass was found with a split tail and Airsacculitis still present inside the carcass, product was retained. At 1733 hours the next retest was passed with no carcasses found with the pathology criteria. The last retest was taken at 1737 and also passed. There was two tanks of product retained with the USDA Retain tags B36 279277 and B36 279278


381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.

381.84 Carcasses of poultry with evidence of extensive involvement of the air sacs with airsacculitis or those showing airsacculitis along with systemic changes shall be condemned. Less affected carcasses may be passed for food after complete removal and condemnation of all affected tissues including the exudate.
