Citation: At approximately 2100 hours, I informed [redacted] (Evis supervisor) of a SPS noncompliance that I had found earlier during my walk through of the Evis department. The plastic grid covers of the old H-vac systems intake ducts, had excessive build up on them. They are adjacent to line # [redacted] at the cropper machine. Upon further investigation, I found the following statement in the establishment's SPS plan. It states,[redacted]" I observed the establishment's facilities check done by the HACCP technician and nothing was documented on the intake grates.

Regulation:

416.2(b)( 2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
