Citation: At 1155 hours I was performing a Fecal Zero Tolerance inspection of 10 birds randomly selected from Line # [redacted] On one of the 10 birds I observed a 1/2 inch long and 1/4 inch wide smear of smooth brown material on the right kidney. I immediately notified [redacted] and she was present as I continued my evaluation of this material. I removed part of the material onto my finger and observed that it was soft and tacky. After smelling the material I concluded that it was fecal material. Furthermore had this bird not been included in my random sample, it would have entered the chilling tank which is not in compliance with 9 CFR 381.65(e). The plant took immediate corrective actions therefore no additional regulatory control action was required. The establishment conducted a retest at 1208 and no further fecal material was observed. Later I checked the establishment's records and observed that the previous acceptable check of CCP1-B had been performed at 1133 hours.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.
