Citation: At approximately 1356 hours while I was performing a Zero-Tolerance check on Line # [redacted] I observed a carcass with a gizzard, with about eight inches of intestine still attached, in the chest cavity. When I removed the gizzard and intestine, I observed fecal material on the trailing side of the neck cavity. The green pasty fecal material was approximately 1/8" x 1/4" in size. I immediately informed [redacted] Evis supervisor) of this nonconformance. An 03J02 procedure, including corrective actions, was initiated immediately, therefore regulatory control was not required. The last zero tolerance check by the HACCP checker had been performed at 1352 hours and was in compliance. A retest was taken at 1400 hours and was in compliance.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(e) Pursuant to 21 U.S.C. 456, 463, 608, and 621, the failure of an establishment to develop and implement a HACCP plan that complies with this section, or to operate in accordance with the requirements of this part, may render the products produced under those conditions adulterated.
