Citation: In the clean room line# [redacted] at the product freezer exit, there is a chute funneling the excess fully cooked diced chicken from the belt down a stainless steal pipe. The diced chicken from the pipe is caught in bulk container then later dumped back onto the conveyor belt going to the bagging machine. At 1030pm I observed condensation on the outside of the pipe that is used to funnel the chicken down to the bulk container. The condensation was running onto a piece of plastic the plant had put around the pipe. The condensation from the plastic dripped three times in the bulk container that contained approximately 30 pounds of diced chicken. I took regulatory control action of the affected diced chicken that had condensation dripping into it with tag#B36279308. I notified the floor supervisor [redacted] of the contaminated box of diced chicken immediately. He took corrective action(s) and I removed the tag. At 10:40pm I notified GPM [redacted]

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.14 Each official establishment shall routinely evaluate the effectiveness of the Sanitation SOPís and the procedures therein in preventing direct contamination or adulteration of product(s) and shall revise both as necessary to keep them effective and current with respect to changes in facilities, equipment, utensils, operations, or personnel.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
