Citation: At approximately 1638 hours, I was performing a prechill finished standards test for Line # [redacted] I had a subgroup total of 32 on the page with the processing noncomformances, which exceeds the subgroup absolute limit of 30. I notified the QA technician that a retest was needed for Line # [redacted] I then notified [redacted] (Evis supervisor) of the noncompliance. The QA technician did a retest at 1652 hours, with a subgroup total of 32, which exceeds the tolerance total of 25. The first retest in postchill with prechill criteria was taken at 1714 hours and passed with a subgroup total of 15. The next retest in Evis was taken at 1722 hours and passed with a subgroup total of 22. The next Evis retest failed with a subgroup total of 28 at 1727 hours. At 1737 hours the next Evis retest passed with a subgroup total of 24. The next postchill retest was taken at 1745 hours and passed with a subgroup total of 13. At 1746 hours the next Evis retest failed with a subgroup total of 28 and another was taken at 1753 hours and passed with a subgroup total of 17. A postchill retest was taken at 1814 hours and passed with a subgroup total of 9. The next Evis retest was taken at 1838 hours(due to line going for lunch break at time of the last retest) and passed with a subgroup total of 17. The next two retest at the postchill table were taken at 1844 hours and 1914 hours and both passed with subgroup totals of 10 and 21. The next two retest at the postchill table were taken at 1944 hours and 2014 hours and both passed with subgroup totals of 12 and 6. The last postchill with prechill criteria retest was taken at 2036 hours and passed with a subgroup total of 12. There was no product retained, due to these failures and retests.

381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
