Citation: At approximately 2055 hours, while I was walking through the plant, I observed heavy condensation on the pipe run over the sanova Dip of line([redacted] and dripping onto the chickens in the dip. I took a regulatory control action by stopping the line. I informed Mr. [redacted] Assistant Plant manager. Immediately, the plant started the corrective action by empty, clean and sanitize the Sanova Dip. At approximately 2120 hours the Sanova Dip was reinspected and found in compliance. The work resumed at 2125 hours. The establishment failed to comply with 9 CFR 416.13(c), 9 CFR 416.2(d), and 9 CFR 416.4(d). This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory action as described in 9 CFR 500.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
