Citation: At approximately 16:15 while performing a walk through of cutup and grinding departments in plant 1 I observed the following deficiencies. 1) Along the north wall next to the water fountain and hand wash station. I observed peeling paint on the wall in several places. At this time a employee was weighing wings directly below the affected area. I did not observe any product contamination. 2) The air sock directly above the leg grinding line has black UFM spots (mold?) running about ten feet in length along the air sick. 3) Between the leg grinding line and the leg deboning line, overhead white insulated pipe with condensation beads six feet in length.(no dripping observed. 416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
