Citation: At 0440 hours while conducting a scheduled Preoperational Sanitation Inspection of the Chilling Department I observed some buildup at the exit of a pipe located near the intermediate chiller exit. Upon closer inspection, this pipe was a short elbow attached to a grey pipe by a small inlet. Standing beneath it, I was able to rotate this pipe 90 degrees so that the end with the residue was pointing down. I was then able to verify that there was a thick buildup of dense yellowish residue all around the inside circumference and 2 inches deep from the rim of the pipe. This pipe is part of a larger system (which was disassembled for inspection at the time) which collects chiller water at the intermediate chiller exit and pumps it a short distance back into the intermediate chiller. [redacted] QSI Supervisor, was present during my inspection and I showed him the noncompliance, and informed him that I would be issuing a noncompliance record. The pipe was recleaned in my presence, and I was then able to reinspect it and found it to be acceptable. This noncompliance was observed and sanitary conditions were restored prior to the start of operations in this department, therefore no product was affected. Later I performed a records review and observed that the SSOP record for this department contained an entry titled "Overflow Pump, Piping, and valve Inter Contact." This entry was marked as "Accept."


416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.
