Citation: At 15:00 Plant 1, (Line [redacted] While walking through where the JSO and Fryers are located I took note of the following deficiency. There were large peeling piece hanging down from the ceiling at several locations in this department. Next to the first conveyor belt on the south wall, near the sauce tanks and where product exits the fryer, at the begin of the JSO oven. Informed [redacted] All the areas are on the ceiling and near or above product zone.


416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
