Citation: At approximately 1444 hours, while I was performing my Finished Product Standard check for Line # [redacted] I observed a carcasses on Line # [redacted] with fecal material on it's back, below the tail. I pulled the carcass off the line and upon further investigation found that the cloaca with approximately 2 inches of intestine was still attached to it. The intestine was draped over the tail area, with a smear (1/2" x 1/8") of green fecal material going down the back of the carcass. I immediately informed [redacted] (Evis supervisor) on the noncomformance. An 03J02 procedure, including corrective actions, was initiated immediately, therefore regulatory control of the process was not required. The last zero tolerance check had been performed at 1418 hours and was in compliance. A retest was taken at 1449 hours and was in compliance.


381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(e) Pursuant to 21 U.S.C. 456, 463, 608, and 621, the failure of an establishment to develop and implement a HACCP plan that complies with this section, or to operate in accordance with the requirements of this part, may render the products produced under those conditions adulterated.
