Citation: At approximately 2140 hours, I had finished the prechill finished standards test for Line # [redacted] I had a subgroup total of 36 on the page with the processing noncomformances, which exceeds the subgroup absolute limit of 30. As I was finishing the test the QA technician approached the station to start her test, so I informed her that a retest was needed for Line # [redacted] I then notified [redacted] (Evis supervisor) of the noncompliance. The QA technician performed a retest at 2142 hours and failed with a subgroup total of 27, which exceeds the tolerance total of 25. The chilling QA technician did a retest at 2201 hours and passed with a subgroup total 23. The Evis QA technician did another retest at 2222 hours and passed with a subgroup total of 24. Then another at 2231 hours and passed with a subgroup total of 20. The chilling QA technician did the next retest at 2301 hours and passed with a subgroup total of 21. Realizing that a half hour retest was missed at 2231 hours, the establishment retained everything that was produced in the time frame of 2231 hours to 2301 hours for further review. The next two retest were taken at 2331 hours and 2400 hours and both passed with subgroup totals of 22 and 20. The last retest passed with a subgroup total of 24 at 0021 hours. No product was retained for rework at the chiller exit.

381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
