Citation: At 1245 hours I completed a Finished Product Standards test on a randomly selected sample of birds taken from Line # at the prechill testing location in the Evisceration Department. The subgroup total for processing nonconformances was 32 which exceeds the subgroup absolute limit of 30 for this test. I notified a QC Technician and an Operations Associate, and a retest was performed immediately. The establishment's retest concluded at 1300 hours and the subgroup total was 28 which exceeds tolerance of 25. At this point the process was judged to be not in control. [redacted] Evisceration Department Supervisor, was notified of the noncompliance. Two additional passing rechecks were performed at 1308 and 1316 hours with scores of 10 and 11 respectively. At this point the process was judged to be in control. Postchill testing using prechill criteria began at 1327 hours at the postchill testing location in the Chilling Department and was conducted every 30 minutes until 1508 hours. None of the tests exceeded tolerance, therefore no product was held for rework.

381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
