Citation: At approximately 15:15 while performing a unscheduled task 03G01 in the fully cooked area .Plant 2, Line [redacted] I observed the following deficiency. On the ceiling directly above the fully cooked conveyor belt, (product on belt) I there were numerous water droplets covering a area approximately 20 foot by 30 foot. I did not observe any dripping at this time on product or equipment. Notified [redacted] (Line Supervisor) I verbally informed him that this area was rejected until sanitary conditions could be restored. At 16:10 corrective actions were taken and sanitary conditions restored. Area released back to plant establishment Also at 15:30 in the packing area around the automatic scales I observe dripping from the ceiling, there was no dripping on equipment or product (Informed [redacted]) Also took note of loose ceiling panels on the ceiling and side wall at the scales.


416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
