Citation: At approximately 0625 hrs. I went to Dept. # 19 to perform procedure 01B02. I found several deficiencies that led to this noncompliance and they are as follows: - Inside the Auger there were more than 10 pieces of splattered fat and meat scraps. - The grinder held 3 pieces of meat inside the bottom half and inside of the hopper was 2 more pieces of meat. One of these pieces was approximately 1" in length. - A cart held the parts for the grinder. Several of these parts were found to be unclean. One of the beehive parts held more than 10 small pieces of fat and other product residues. Another piece of equipment held emulsified product smeared around it. Laying atop of several other equipment parts; was a piece of meat that was approximately 2" in length. - The top grid of the 'parts wash station' held two pieces of fat and/or meat scraps. Inside the product wash table; under the top grid, there were more than 5 pieces of fat, meat and/ or other product residues. I immediately notified QSI Supervisor-[redacted] of this noncompliance and showed him all findings. Corrective actions were taken immediately, however production wanted to start to set up while these actions were being taken. They were not permitted to start production until all the appropriate corrective actions were taken and verified. Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
