Citation: At approximately 1440 hours, while walking through the north end of the establishment's evisceration department I was sprayed with a fine mist.. I looked up and saw a fan mounted on top of the inside/outside bird washer of line # [redacted] which was dripping condensation. The fan was turned on and was spraying the condensation onto the area below. I observed the condensation spraying directly into a tank approximately half full of ice used to chill product. The blue plastic cover of the tank had been pulled all the way back to allow access to the ice. Thus the condensation was being sprayed directly onto the ice. I immediately took a regulatory control action and placed US Retain Tag #B36279393 onto the tank of contaminated ice. A maintenance person came and shut the fan off. I found Evisceration Supervisor [redacted] in the south end of the department and immediately requested that he accompany me to the area of concern. I showed him the tank of contaminated ice and notified him of the noncompliance and that an NR would be issued. In addition, while walking to the south end of the department, I observed beaded condensation, that was not dripping, on white insulated pipes over the hand wash sink, over line # [redacted] between the venter machine and the opener machine, and on another insulated pipe running east-west over line # [redacted] beside the rehang area. Evisceration Supervisor [redacted] was shown and notified about this noncompliance as well. An employee was summoned to wipe down the affected pipes. At 1650 hours, I observed the US Retained ice being melted and washed down a floor drain in the tank wash room, and the tank was taken out of service for washing. A review of the plant's facility records revealed an entry at 1442 hours for unacceptable condensation in the evisceration department. At 1507 hours, an entry was made indicating that the condensate was being continually wiped down. A subsequent entry in the records approximately 2 hours later indicated that the condensation was still present and was being wiped down This document serves as written notification that your failure to comply with regulatory requirements may result in additional regulatory or administrative action. Past similar NRs: 69-2011-17483 dated 07/21/2011. Condensation in evisceration department. Past ineffective plant actions: the plant has not yet presented corrective actions in response to this noncompliance.


416.13(b) Each official establishment shall conduct all other procedures in the Sanitation SOPís at the frequencies specified.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
