Citation: At 1619 hours, I performed ISP 06D02, Presentation test, at inspection station #1 of evisceration line #2. I obtained the result of 3 birds with viscera on shackle, 1 bird with no viscera, 1 opening cut defect, and 2 birds not reflected for a total nonconformance weight of 49, which indicated the process was out of control. I immediately notified Evisceration Supervisor [redacted] of the result and took a regulatory control action by requesting an immediate line speed reduction from [redacted] birds per minute (bpm) to [redacted] bpm. The presenter was changed by plant management. At 1640 hours, I retested the line and obtained the result of 1 bird with viscera not uniform, 2 birds with opening cut defect, and 1 bird with contamination inside for a total weight of 16, which passed. The line speed was increased to [redacted] bpm. At 1727 hours the line was tested at [redacted] bpm and the line passed, indicating that process control was achieved. This document serves as written notification that your failure to comply with regulatory requirements may result in additional regulatory or administrative action. Regulation:

381.76(a) A post-mortem inspection shall be made on a bird-by-bird basis on all poultry eviscerated in an official establishment. No viscera or any part thereof shall be removed from any poultry processed in any official establishment, except at the time of post-mortem inspection, unless their identify with the rest of the carcass is maintained in a manner satisfactory to the inspector until such inspection is made. Each carcass to be eviscerated shall be opened so as to expose the organs and the body cavity for proper examination by the inspector and shall be prepared immediately after inspection as readyto- cook poultry. If a carcass is frozen, it shall be thoroughly thawed before being opened for examination by the inspector. Each carcass, or all parts comprising such carcass, shall be examined by the inspector, except for parts that are not needed for inspection purposes and are not intended for human food and are condemned.

381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
