Citation: At approximately 2110 hours, I opened the door between the evisceration department and the picking room and I observed that the floor of the picking room was extensively flooded with brown-colored water, feathers, and organic matter. The flooding extended throughout the entire room up to the scalder tanks. There were several inches of brown liquid covering the floor. This constitutes an insanitary condition. I immediately notified the closest supervisor, [redacted] and showed him the flooding. He proceeded to investigate. The establishment was not in compliance with 9CFR 416.2(e)(4) which requires that plumbing systems must be installed and maintained to provide adequate floor drainage in all areas where floors are subject to flooding-type cleaning or where normal operations release or discharge water or other liquid waste on the floor. This document serves as written notification that your failure to comply with regulatory requirements may result in additional regulatory or administrative action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(e)(4) Provide adequate floor drainage in all areas where floors are subject to flooding-type cleaning or where normal operations release or discharge water or other liquid waste on the floor;
