Citation: At approximately 1826 hours, I was performing a walk through in the Evis department, when I noticed condensation on multiple insulated pipes above Line # [redacted] One was above the back-up puller station after the pac-man and another above the cropper. There were three more pipes that weren't directly above product, but in the same area. I immediately stopped the line and informed the group leader of the nonconformance. He went to get a mop to wipe down the pipes. When he started to wipe down the pipe above the back-up puller station the condensate started to drip onto the product. I informed [redacted] (Evis supervisor) of this noncompliance. After the pipes were all wiped [redacted] down, marked the shackles with the contaminated carcass on them and then I started the line. When the carcasses got further down the line, I observed [redacted] stopping the line and cleaning the carcasses with a chlorinated water hose. No product was retained.

Regulation:

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
