Citation: At approximately 2125 hours, I was performing a prechill finished standards test for Line # [redacted] I had a subgroup total of 42 on the page with the processing noncomformances, which exceeds the subgroup absolute limit of 30. I notified [redacted] (Evis supervisor) of the noncompliance. I then informed the QA technician that a retest was needed for Line # [redacted] The QA technician performed a retest at 2134 hours and failed with a subgroup total of 26, which exceeds the tolerance total of 25. The chilling QA technician did her first retest at 2155 hours and failed with a subgroup total of 35 and product coming out of the chiller was retained. Meanwhile, the Evis QA technician did his next two retest at 2201 hours and 2211 hours and passed with subgroup totals of 19 and 23. The chilling QA technician did another retest at 2215 hours and passed with a subgroup total of 23, which stopped the retention of product. The chilling QA technician did her next two retest at 2243 hours and 2313 hours and passed with subgroup totals of 19 and 15. The QA technician did another retest at 2343 hours and passed with a subgroup total 16. The last retest was taken at 0002 hours and passed with a subgroup total of19. There was a total of 6 tanks retained to be reworked with the USDA retain tag #'s B36 279358, B36 279359, B36 279360, B36 279363, B36 279364, B36 279365.

381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
