Citation: At approximately 1629 hours, while I was finishing my postchill AQL test, I observed condensation on an insulated pipe running from the south wall to above product on Line # [redacted] in the chilling department. After further investigation I observed more condensation on 2 grey pipes(INSPEXX pipes marked "Evis Line Spray cabinet" and "Salvage Parts Spray Tunnel") above product on Line # [redacted] in the chilling department. I informed [redacted] (chilling supervisor) of the noncompliance. I observed the wiping of the pipe above Line # [redacted] and didn't observe any dripping of the condensation onto the carcasses below. [redacted] said, he was going to clear out the line and stop Line # [redacted] to get to the condensation above it. Later, I went to the QA department and asked the QA technician to bring up the establishment's facilities report. The first check had not been performed till1724 hours and had the condensate absent category marked as "accept".

Regulation:

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
