Citation: At 0600 hours I completed a scheduled 03J02 procedure by reviewing via the establishment's Plant View computerized recordkeeping system all the HACCP Poultry Slaughter records for the first shift for the day of 05/18/2011. I observed that checks for "CCP [redacted]" were performed at 06:30 and 08:33 hours. At 0805 hours I informed [redacted] HACCP Coordinator, that a check appeared to be missing which should have been recorded sometime during the 7 o'clock hour. I then later confirmed with [redacted] that a check had been performed but had not been recorded. At this time I informed him that the failure to document the monitoring of this CCP was a recordkeeping noncompliance, and I would be documenting the incident on a Noncompliance Record. I then was able to review additional records and confirmed that two Finished Product Standards tests were performed for Line # [redacted] at 07:17 and 07:19 hours by two separate individuals. It is reasonable to assume based on these records that no product was observed to be adulterated with fecal material during these checks. I also reviewed the establishment's HACCP plan and confirmed that the frequency for monitoring this CCP is listed as once per hour of production.

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
